Nisin is a peptide,natural fermentation product by strains of Lactococcuselactis subsp. It has an efficient anti –bacterial activity, so it can effectively inhibit Gram- positive bacteria in processed food. Juice and Dairy.
*Nisin inhibits the growth of a wide range of gram-positive against some heat-resistant spore-former bacteria such as Bacillus stearothermophiluse, Bacillus cereus and Clostridium botulinum.
*Nisin reduces the thermal processing temperature and/ or time and minimizes loss and improves food quality and shelf life.
Also it is hydrolyzed into amino acids by proteins in the intestine after human consumption and has no impact on natural microflora including probiotics in human body.
